Honey dew melon, white nectarine and prosciutto

Lazy Afternoon Snacks

So whilst most of the northern hemisphere is preparing some winter warmers ahead of the holiday period, down south it’s too hot, and bright to eat something ridiculously heavy (as much as I would like to). So after a swim, lunch usually consists of whatever is fresh and at hand in the house and easy to prepare to satiate a post exercise appetite.. Unfortunately post swim hunger doesn’t allow me the time to whip out the 5D so iphone photos will have to suffice.

Honey dew melon, white nectarine and prosciutto

Honey Dew Melon, White Nectarine & Prosciutto

(serves 1 hungry swimmer)

1 cup honey dew melon
White Nectarine
2 slices prosciutto (parma ham)

Dice the fruit, tear the prosciutto on top. Carbs and protein done! The saltiness of the ham is a perfect complement to the sweetness of the fruit. It’s the classic hors d’oeuvre combo in a bowl.

m seed and diced mango

Coconut Sago with Palm Seeds & Diced Mango

(serves 1 hungry swimmer)

1/2 cup cooked sago (here’s how)
1/2 cup light coconut milk (you can also use regular)
2/3 cup diced mango
1 tablespoon palm seeds with syrup
few ice cubes

combine sago with the coconut milk, add a dash of water if too thick. Stir in the palm seeds and then the diced mango. I like to puree a little of the mango as well to add to the soup. Add the ice cubes if you’re like me and like your sago ice cold.
